Why we only roast on Tuesdays and Fridays

A 15-kilo drum needs half an hour to heat evenly. Roasting a little every day burns a lot of gas for little coffee, and every day's batch comes out slightly different.

With two fixed roast days we collect orders until noon the day before and roast exactly what goes out. The day after, the bag is with the courier. Between drum and letterbox there are rarely more than three days.

The downside: order on Tuesday at 1 pm and you wait until Friday. In return every bag carries its real roast date, and it is never older than half a week.
